If you’re a fan of the hilarious TV show, Parks and Recreation, then you’ll appreciate celebrating Galentine’s Day over Valentine’s Day every February. Leslie Knope famously coined this term to celebrate female friendships and the people who are by your side through thick and thin… over the weird Hallmark holiday that usually consists of bad flowers, boxed chocolates, and expectations that are never met. It’s one of the most celebrated fake holidays according to The Atlantic, more on that here. Whether you’re celebrating Galentine’s Day tomorrow, or Valentine’s Day Friday or maybe the long Presidents’ Day weekend, I wanted to share some fun recipes to cook for your girlfriends, friends, and family. Every year, regardless of whether or not I have a special someone… I always try to spend time with my girlfriends on February 14th. This year, I’m getting together with some of my favorite friends to cook up and Indian feast! For now, how about a perfectly roasted chicken along with a warm roasted veggie salad topped with fresh herbs and the vinaigrettes you learned how to make last week…and, some Thin Mint mini cheesecakes?
